The magical origin of Corovita ORGANIC Olive Oil Single Estate Mirtat

The olives for Corovita Mirtat olive oil are grown in northwestern Turkey, more specifically in the small town of Gülpinar. In this region, not far from the ancient city of Assos and a long way from the legendary city of Troy, olives are grown in many villages. The Sen family also has its headquarters here and operates its own olive mill.
The climate here is ideal for olive cultivation. The Mirtat field is located directly on the sea, so the constant sea breeze protects the harvest from the worst of the summer heat. In addition, the constant light breeze also helps to chase fruit flies from the trees. In winter, the direct proximity to the Aegean Sea protects the field from excessive cold – it can get quite cold here in February and March.
Corovita Mirtat is the most beautiful field owned by the Sen family and offers a spectacular panorama. Situated directly on the sea, with some wonderful, deserted beaches, gentle cliffs rise up, bordered by hilly slopes covered with olive trees. A truly dreamy sight!
The story behind: Corovita ORGANIC Olive Oil Single Estate Mirtat
The Mirtat field has been family-owned since 1955 and is approximately 10 hectares in size. Originally, it wasn't used for olive cultivation, but had natural, wild vegetation—including wild olive trees.
Through years of painstaking work, the wilderness was replaced by pure olive cultivation. Thus, the Mirtat field became a true gem, and remains so to this day.
As soon as you enter the grove and sit beneath a century-old, evergreen olive tree, listening to the sound of the sea, you'll enter another world and never want to leave this enchanting beauty. Even today, many other plants can be found in the field, but the focus is on cultivating olives and one simple goal: producing the finest olive oil.
Cultivation & Harvest – Where do the olives for olive oil come from?

To ensure good quality, the fields must be tended year-round. The process usually begins immediately after the harvest in January. One of the most important tasks is pruning the trees so that the sun can reach every branch in summer. This step requires considerable experience, as the pruning process requires estimating how many olives will later hang on the branches to avoid breaking them.
Over the course of the year, plowing, fertilizing, and irrigation still need to be done. Like any farm, we are always dependent on the weather. If it rains, the hilly fields are difficult to reach with tractors. This can lead to delays, especially during the olive harvest in autumn and winter.

Mill & Production – From organic olives to high-quality olive oil
The harvest season for the organic Mirtat olive field is usually in November. To avoid damaging the olives during harvesting, a gentle mechanical method is used instead of beating them with a stick. The harvested organic olives are then transported to the mill in crates.
The decisive factor when transporting the harvest to the mill is speed. The faster the olives are pressed, the better the final result. To avoid any waiting time, the olives are processed in the mill's own mill.
This ensures that the laboriously harvested olives are processed quickly and with high quality into delicious organic olive oil. Instead of a mechanical press, a modern cold extraction process is used.
